Ripe Bananas Rolled Oats and Chocolate Chip Cookies
Ingredients
- 1 cup oats
- 2/3 cup whole wheat flour or ap flour
- 1 3/4 teaspoons baking powder
- 1 tablespoon of nutmeg
- 1/4 teaspoon kosher salt
- 1 1/2 very overripe bananas 1/2 cup
- 1 1/2 tablespoons olive oil
- 1 large egg at room temperature
- 1/4 cup plus 2 tablespoons light brown sugar
- 1 teaspoon pure vanilla extract
- 3/4 cup dark chocolate chips

- Preheat oven to 350 degrees
- Line a large baking sheet with parchment paper. In a medium mixing bowl, mix the oats and whole wheat pastry flour until combined - then add in the nutmeg and salt to taste before adding your favorite ingredients into this mixture.
- In a large mixing bowl or the stand mixer, mash-up that banana. Add coconut oil and egg to make sure you have 1/2 cup of batter, then mix it with brown sugar and vanilla extract on medium-high for at least 3 minutes. It's going to be chunky and wet.
- Add the dry ingredients to the wet ingredients and mix at low speed just until it disappears. Then, add chocolate chips for some extra sweetness!
- Drop the pre-made dough in 1/4' inch round mounds onto baking sheets and set them to refrigerate. The cookies will spread out less if they are chilled for at least 2 hours before being eaten!
- Place the cookie sheet in the oven directly from the fridge and bake for 10-13 minutes. Cookies will feel underbaked when pressed but should be dry set on edges. If you want a crispier result, then leave them to cool down before transferring them onto a baking tray.
