1. Set the oven for preheating at 350 °F. Also, ready a cake pan by lining it with parchment paper or greasing it with oil.
2. Prepare the dry cake mix by combining the whole wheat flour with baking powder, baking soda, & salt.
3. Now, peel two bananas and mash them using a fork or masher (kids love the mashing part so let them do it). Add in the palm sugar, canola oil, & vanilla extract. Combine nicely using an electric hand blender or whisk to achieve a smooth runny batter.
4. Next, add the dry flour mix part by part into the wet banana mix. Fold gently for about 20 seconds in one direction with a spatula.
5. Then, add the chopped walnuts and fold again.
6. Transfer the cake batter into the lined/greased cake pan. Peel the leftover banana, slice it lengthwise, and place them gently on top of the cake.
7. Lightly tap the cake pan 1-2 times and put it in the preheated oven to bake for 30-35 minutes at 350 °F. (Check if the center is raw using a toothpick, if it feels sticky, bake for 5-10 minutes more).
8. Lastly, let the banana cake cool in the pan for 5-10 minutes. Then, slice it up and relish it with your kids while warm alongside a glass of chilled chocolate milkshake.
Notes: If you cannot find palm sugar, you may try coconut or brown sugar in your kid’s dessert. Maple syrup is another option.
