Prepare the Sweet Potatoes:
· Preheat the oven at 400° F.
· Rinse the sweet potatoes thoroughly, pat dry, and poke them with a fork 5-6 times.
· Place the potatoes on a baking tray that you lined with parchment paper.
· Transfer to the preheated oven and bake for 45-60 minutes at 400° F till they are soft like butter.
· After removing the tray from the oven, let it cool for 10-15 minutes, remove the skin, and remove the flesh. Keep aside.
Cook the kid-friendly recipe
· Preheat the oven to 350° F. Line a baking pan (9×13 inches) with a parchment sheet.
· Now, transfer the baked potato flesh into a food processor.
· Add the agave syrup, sunflower seed butter (or almond butter or peanut butter), coconut flour, cinnamon powder, vanilla extract, baking powder, & salt. Pulse for a few seconds or until combined.
· Now, remove the blade and fold a tablespoon of almond milk (or other nut butter) into the batter. Continue folding and adding a tablespoon of almond milk till the batter is thick, sticky, and roughly crumbly. (Be careful not to add all at once, or else the batter will become soggy).
· Transfer the batter onto the lined baking pan. Smooth out the top, and sprinkle the chopped nuts (or coconut flakes) evenly on top.
· Place the pan in the preheated oven and bake for 30-35 minutes at 350° F.
Once baked, let the nutty golden blondie cool on the kitchen top for 20 minutes. Then, cut them into squares and enjoy!
