Ingredients
- 2 cups whole wheat flour
- 2 tsp baking powder
- 1 teaspoon baking soda
- A pinch of salt
- 1 egg
- 4 Tbsp plain Greek yogurt
- ½ cup of milk or almond milk
- 4 Tbsp unsweetened applesauce
- ÂĽ cup zucchini (grated)
- ÂĽ cup carrots (grated)
- 1 cup Cheddar cheese (shredded)·     2 cups whole wheat flour

·     Ready a 12-cup muffin tin or muffin pan with muffin cups or parchment sheet. Also, preheat the oven to 375 degrees.·     In a large bowl, whisk the egg. Add in the wet ingredients (greek yogurt, milk, & apple sauce.) Whisk again to combine.
·     Take a separate bowl to prepare the dry mixture. Sieve the wholemeal flour, baking powder, baking soda, & salt.
·     Now, little by little, add the dry mix to the wet mixture and fold gently (for about 20-30 seconds) till nicely combined into a lumpy batter. Avoid folding the batter too much.
·     In another medium bowl, mix the grated zucchini, carrots, & shredded Cheddar cheese.
·     Next, divide the batter into 12 equal portions in the lined muffin tray. Then, add a little bit of the veggie-cheese mix on top of each raw muffin and stir once with a toothpick.
·     Put the muffin tray in the preheated oven and bake for 20 minutes or until the muffins turn light brownish.
Finally, allow them to cool completely, then gorge on these savory muffins along with your kids at any hour of the day!

·     Instead of whole wheat pastry flour, you may use organic all-purpose flour or gluten-free flour like almond flour, oat flour, or coconut flour.·     If you don’t have applesauce, you may substitute it with canola oil or extra virgin olive oil. ·     If you feel like a little extra sweetness will work for your kids, add 3-4 tablespoons of organic cane sugar to this recipe for healthy muffins.
