My gluten-free muffin and cookie recipes use quality flours like almond flour and organic oat flour, which contain no gluten (gluten is the protein in flours such as wheat). Holiday Dessert Recipes for Kids
Chocolate Chip Banana Muffins (gluten-free)
Bowl 1
2 cups organic oat flour (oats do not contain gluten but organic ensures that there is no contamination with wheat and therefore 100% gluten free)
1 cup almond flour
¾ tsp. sea salt
1.5 tsp. baking powder
¾ tsp. baking soda
1/8-cup ground chia seeds
MIX WELL
Bowl 2
5 ripe bananas mashed
3 eggs
¾ cup cane sugar
¾ cup milk or almond milk
3 tsp. vanilla
1-2 tsp. cinnamon (optional)
¼ soft or melted butter
2 tbsp. coconut oil
½ cup mini or regular chocolate chips
MIX WELL
Combine all ingredients together and bake at 350 degrees Celsius for approximately 45-50 mins. Makes about 12-18 muffins.
Chocolate Chip Cookies (Gluten-free)
Mix everything into one bowl
Preheat oven to 350 degrees Celsius.
2 eggs beaten
1 cup almond flour
1.5-cups organic oat flour (oats do not contain gluten but organic ensures that there is no contamination with wheat and therefore 100% gluten free)
1/3-cup organic cane sugar
1/4-cup raw honey
1/3 (or ½) cup of organic dark mini chocolate chips
1/4-cup coconut oil (melted or very soft)
1/8-cup ground chia seeds
¼ tsp. baking soda
¼ tsp. sea salt
½ tsp. cinnamon (or more if you love cinnamon)
Mix really well (especially the coconut oil). Form into balls and flatten slightly into cookie shape (they won’t flatten in the oven).
Bake for 15-20 minutes.
